6 Fall Soup Recipes to Try This October
Ah yes. With the slight chill in the air and the sneaky invasion of pumpkin spice lattes into Starbucks, fall is here. I don’t know about you, but settling by a fire place with something warm and wearing comfy sweaters is something I refuse to let COVID-19 ruin. Here are some soup recipes I have been dying to try and that I hope you find the time to make too.
Coconut Curry Lentil Soup (via The Modern Proper)
Creamy, tangy, and chock-full of green vegetables (and vegan!) this coconut curry soup will deliver all of the greens you and your kids need as well as have your guests raving. Only a 30-minute endeavor that uses one pot. What more could you ask for?
Lemon Chicken Orzo Soup (via Damn Delicious)
Chicken Noodle Soup 2.0. The orzo makes gives the dish texture and a thick consistency. Carrots, zucchini, celery, and a variety of herbs make this dish earthy and, in the words of a reviewer, “comfort in a bowl.”
Miso Ramen with Chicken (via Food & Wine Magazine)
I have a newfound appreciation for Asian food now that I’ve tried to make a few dishes at home, but this dish is so simple I might make it for dinner tonight. Gooey egg, tender chicken, and a rich broth makes this meal one to bookmark.
Creamy Sweet Potato Soup (via She Wears Many Hats)
A riff off of the quintessential butternut squash soup, this sweet potato soup warms up even the coldest of fall days. Slightly sweeter than butternut and best enjoyed with a sprig of spring onion and a dollop of sour cream as pictured.
Turkey Wild Rice Soup (via Lexi’s Clean Kitchen)
It’s not Thanksgiving just yet, but that doesn’t mean we can’t sneak in a little teaser turkey here and there. The fish sauce (optional) provides the dish with another “flavor dimension” and the genius of the shredded chicken gives you more meat per bite.
Creamy Pumpkin & Corn Chowder (via Ahead of Thyme)
This is a soup I’ve never tried before but you better believe I will soon. Packed with sweet corn, pumpkin, and potatoes and garnished with pine nuts, a dash of milk, and rosemary, this soup wraps a multitude of fall flavors into one beautiful bowl.
May these soups activate your fall spirit and whisk you away to a place where all that matters is if you feel more like a broth-based or cream-based soup today.
